Ingredients
- Base: 2 cups chopped Kale (stems removed), 1 cup Arugula
- Protein: 1 Grilled Chicken Breast (sliced or cubed)
- Toppings: ½ Avocado (sliced), ¼ cup Fresh Blueberries, 2 tbsp Walnuts (chopped)
- Dressing: 1 tbsp Extra Virgin Olive Oil, 1 tbsp Balsamic Vinegar, a pinch of Coarse Salt, and Freshly Ground Black Pepper
Instructions
- Prep the Kale: Place your chopped kale in a large bowl, drizzle a tiny drop of the olive oil on it, and massage it with your hands for about 1 to 2 minutes. It will wilt slightly, turn bright green, and become much more tender.
- Build the Base: Toss the massaged kale and arugula together in your serving bowl.
- Arrange the Toppings: Artfully place your grilled chicken, avocado slices, blueberries, and walnuts on top of the greens (Just like the picture!)
- Whisk the Dressing: In a small glass or bowl, vigorously whisk together the balsamic vinegar, remaining olive oil, salt, and black pepper until emulsified.
- Finish and Serve: Drizzle the dressing over the salad right before eating, give it a gentle toss, and enjoy!
Micronutrient Overview
| Ingredient | Key Micronutrient | Health Benefit |
| Kale and Arugula | Vitamins A,C,K and Folate | Vitamin K is crucial for bone health and blood clotting. Vitamin C boosts immunity and enhances iron absorption. |
| Avocado | Potassium, Vitamin E and Monosaturated Fats | Healthy fats in the avocado helps absorb the fat soluble vitamins found in the greens. |
| Blueberries | Anthocyanins (Antioxidants),Vitamin C | Provide potent antioxidant properties that fight oxidative stress and support brain health. |
| Walnuts | Alpha-Linolenic Acid (ALA Omega-3),Magnesium | Supports heart and brain health while reducing inflammation. |
| Grilled Chicken | Vitamin B6, Niacin(B3), Selenium | Essential for energy metabolism, cellular repair, and maintaining lean muscle mass. |
| Olive oil& Balsamic Vinegar | Polyphenols, Vitamin E |
Provides anti-inflammatory compounds and further aids the absorption of fat-soluble vitamins. |
Food Synergy Mechanisms
-
Fat + Fat-Soluble Vitamin Synergy: Healthy fats from olive oil, avocado, and walnuts trigger bile production and form micelles, acting as essential transport vehicles that allow the body to efficiently absorb the fat-soluble vitamins (A, K, and E) found in kale and arugula.
-
Vitamin C + Iron Absorption: Non-heme (plant-based) iron in greens naturally has a low absorption rate, but Vitamin C from the kale and blueberries chemically transforms this iron into a form that the human gut can easily absorb.
-
Antioxidant Amplification: Water-soluble Vitamin C and fat-soluble Vitamin E (found in olive oil, walnuts, and greens) work in a continuous cycle where Vitamin C regenerates oxidized Vitamin E back into its active form, creating an ongoing antioxidant defense system that protects the salad's polyphenols and anthocyanins.
-
Macronutrient Matrix for Glycemic Control: The combination of lean protein (grilled chicken), healthy fats (avocado, walnuts), and high fiber (kale, arugula) slows down gastric emptying, causing the natural sugars in the blueberries and balsamic vinegar to absorb slowly to prevent blood sugar spikes and provide steady energy.
