Salmon and Quinoa Bowl

Ingredients:

Yields:1-2 servings 

  • The Protein: 1 Salmon fillet (marinated in 1 tbsp Extra Virgin Olive Oil, 1tsp dried Oregano, fresh Parsley and Black Pepper).
  • The Base: 1/2 cup Quinoa (rinsed)
  • The Colors: 1 medium Sweet Potaro(cubed) and 1/2 Avocado (sliced).
  • The Dressing: 1 tbsp Tahini, 1 tsp freshly grated Ginger, 1 tbsp Lemon juice, 1 tsp Honey (optional for balance), splash of warm water to thin it out.

Instructions:

  1. Marinate the Salmon: Coat the salmon in olive oil, oregano, parsley, and black pepper. Let it sit for 15min while you prepare the rest. 
  2. Roast the Sweet Potato:  Toss sweet potato cubes with a tiny bit of olive oil and roast until tender. 
  3. Cook the Quinoa: Combine 1/2 cup quinoa with 1 cup water. Bring to boil. them simmer on low heat for 15 minutes until the "tail" appear. Fluff with a fork.
  4. Cook the Salmon: You can either roast the salmon alongside the sweet potatoes for 12-15minutes or pan-sear it over medium heat until the internal temperature reaches 63 degree Celsius. 
  5. Whisk the Dressing: Mix the tahini, grated ginger, lemon, and water until smooth and creamy. Add salt to taste. 
  6. Assemble the Bowl: Place quinoa at the bottom, top with the salmon, roasted sweet potatoes, and fresh avocado slices. Drizzle the ginger-tahini dressing over everything.
